Tasty Tuesday: Baked Blueberry French Toast

This scrumptious recipe was provided by my sister-in-law, Christine. She credits her four sisters for helping her perfect the recipe. It's a favorite Sunday morning breakfast at our house.
Ingredients:

  • 1 long, thin loaf of French bread
  • 6 eggs
  • 6 tbsp. sugar
  • 2 tsp. vanilla
  • 4 1/2 cups milk

Topping Ingredients:

  • 1 cup flour
  • 3/4 cup brown sugar
  • 1 tsp. cinnamon
  • 1/2 cup butter or margarine (1 stick)
  • 2 cup fresh blueberries
  • 2 cups sliced strawberries (optional)

Directions:

  1. Spray a 9 x 13 inch baking dish with nonstick cooking oil spray. Cut French bread diagonally into 1-inch slices and place in baking dish. In a medium bowl, beat together the eggs, milk, sugar and vanilla.
  2. Pour the egg mixture over the French bread, turning the slices to coat well. Cover and refrigerate overnight.
  3. In morning, preheat oven to 375ºF, Combine the flour, brown sugar, cinnamon; cut in the butter or margarine until mixture is crumbly. Turn the slices of bread over once and then sprinkle the topping and blueberries on top. Bake 40 minutes, uncovered. Cut into squares and serve with fresh strawberries, if desired.
Christine's Tip: Make the topping the night before and store in a ziplock bag in the refrigerator.

Mmmmmm ... that sounds absolutely delicious! I'll have to try that the next time I'm serving brunch (or breakfast to overnight guests).
Great tip about preparing topping the night before!

Perfect! Finding tasty, fresh fruit and veggies in my area of Florida is a challenge not often won. BUT, over the weekend they had blueberries from North Carolina at the market. Now usually they are not very good and run $4.99 a pint, definitely out of my budget, especially since they are not good.

Anyway, they were on sale - 3 pints for $5, so I gave them a try. They were very good, so I went back yesterday and bought 3 more pints and have been trying to think what I want to make besides just throwing them in my fruit/granola breakfast. Thanks to you, now I know! Sounds yummy!
