Easy Bruschetta


Grab a few ripe tomatoes and some basil from the garden and try this delicious appetizer. It's a family favorite at our house!

Ingredients
:
  • 6 ripe tomatoes
  • 2 cloves garlic, minced
  • 1 teaspoon balsamic vinegar
  • 6-8 fresh basil leaves, chopped
  • salt and pepper to taste
  • 1 French bread baguette
  • 1/4 cup plus 1 tbsp. olive oil

Directions:
  1. Finally chop the tomatoes. Mix together the chopped tomatoes, garlic, 1 tbsp extra virgin olive oil, and vinegar in a bowl. Add the chopped basil, salt and pepper. Mix well and set aside.
  2. Slice the baguette on a diagonal about 1/2 inch thick slices. Coat both sides of each slice with olive oil using a pastry brush. Place on a cooking sheet and toast under the broiler in the oven. Turn each slice once the top is toasted and toast the other side.
  3. Top with the tomato mixture and place under the broiler for another minute or two to brown. Serve immediately.

I love this but never made it. I've been to parties where they have told me they just bought there's and I can't even see it in the store. I will have to try this one next time I have girls over :)

When I indulge I mix creme cheese and mayo with a little garlic...add tomatoes and sprinkle with cheese bake till cheese melts top off with chives...it is festive green and red at Christmas.
