Ingredients:
- 6 ripe tomatoes
- 2 cloves garlic, minced
- 1 teaspoon balsamic vinegar
- 6-8 fresh basil leaves, chopped
- salt and pepper to taste
- 1 French bread baguette
- 1/4 cup plus 1 tbsp. olive oil
Directions:- Finally chop the tomatoes. Mix together the chopped tomatoes, garlic, 1 tbsp extra virgin olive oil, and vinegar in a bowl. Add the chopped basil, salt and pepper. Mix well and set aside.
- Slice the baguette on a diagonal about 1/2 inch thick slices. Coat both sides of each slice with olive oil using a pastry brush. Place on a cooking sheet and toast under the broiler in the oven. Turn each slice once the top is toasted and toast the other side.
- Top with the tomato mixture and place under the broiler for another minute or two to brown. Serve immediately.

I love this but never made it. I've been to parties where they have told me they just bought there's and I can't even see it in the store. I will have to try this one next time I have girls over :)

All my tomatoes are ripening at once. I was thinking of making salsa, but bruchetta sounds like a good idea. I think I'll make this today. Thanks for sharing.
When I indulge I mix creme cheese and mayo with a little garlic...add tomatoes and sprinkle with cheese bake till cheese melts top off with chives...it is festive green and red at Christmas.
