- 1 (16 oz.) bag frozen broccoli cuts
- 2 whole chicken breasts
- 2 cans cream of chicken soup
- 1/2 cup mayonnaise
- 1 tsp. lemon juice
- 1 section Ritz crackers, crushed
- 1 tbsp. Promise light margarine, melted
- 1/4 tsp. curry powder
- 1/2 cup shredded light cheddar cheese
- nonstick cooking spray
- Cut chicken into bite-sized pieces and brown in a frying pan.
- Cook broccoli according to the package directions; drain.
- Spray a casserole dish with nonstick cooking spray; arrange broccoli in bottom.
- Place chicken on top of broccoli.
- Combine soup, mayo, lemon juice and curry together and pour over chicken.
- Sprinkle with shredded cheddar cheese.
- Mix Ritz crumbs with melted margarine; sprinkle on top of casserole.
- Bake at 350°F for 25 minutes, then brown under broiler for 2 minutes.
- Serve over whole wheat noodles or rice.

Your kitchen looks fabulous, as I know you do a lot of cooking... I get hungry everytime I see one of your recipes.
