Whether we host holiday dinners at our home or travel to be with family or friends, this is one side dish that is always requested.
Ingredients:
- 1 section Ritz crackers
- large bag frozen broccoli florets
- 1 pkg. Velveeta cheese
- 2+ tsp. butter
- 1/3 cup milk
- Preheat oven to 400°F. Spray a casserole dish with nonstick cooking spray.
- Boil and drain broccoli according to package directions and place in the casserole dish.
- Cut Velveeta cheese into cubes and arrange on top of broccoli. Pour 1/3 cup of milk over the cheese.
- Crush Ritz crackers in a food processor and sprinkle on top of casserole; dot with butter or margarine. Bake uncovered for 30 minutes.

Oh yum! My kind of recipe! There's nothing like broccoli and cheese, is there?
I make something similar every now and then for my son (it's one of his absolute favorites). I just add a can of white-meat chicken and some macaroni. You could probably use whole grain or whole wheat macaroni to make it a bit healthier.
Sounds delicious - and I love Ritz crackers used as a topping!
