Grilled Cod Fish
Ingredients:
- 1 lb. cod fish
- 2-3 fresh, large basil leaves, chopped
- 1 lemon
- sea salt
- white pepper
- 1 clove garlic, crushed
- 1/4 cup extra virgin olive oil
- cooking oil spray
- Spray grill pan with cooking oil spray.
- Thinly slice lemons and arrange on grill pan.
- Arrange cod fish on top of lemons.
- Baste fish with olive oil, then sprinkle with salt, pepper, basil and crushed garlic.
- Cook on a preheated medium-high grill for about 10 minutes per inch of thickness.

Salad Ingredients:
- 1 pkg. organic spinach
- 2 hard boiled eggs
- 4 slices Oscar Mayer turkey bacon, cooked and crumbled
- warm vinaigrette dressing (see below)
- 1/3 cup extra virgin olive oil
- 1/3 cup balsamic vinegar
- 1 tsp. Truvia
- 1/2 tsp. Dijon mustard
- 1/2 tsp. sea salt
- 1/4 teaspoon freshly ground black pepper
- Wash spinach and remove stems; place leaves in individual salad bowls.
- Chop eggs into small pieces and arrange on top of spinach leaves.
- Add crumbled bacon to salad bowls.
- Combine dressing ingredients in a small bowl and heat until warm. Pour warm dressing over spinach salad and serve.

I really enjoy your recipes! Not only are they delicious and healthy, they are also easy to prepare. (making it much more likely that I will prepare them!)I have cod in the freezer and spinach in the garden - just waiting for to put them to use. This is a really neat way to make cod...my fish always falls through the grids. Now I know what to do with the cod I have frozen!

Oh, Jane, that looks sooooo good! It's been eons since I had some good Cod filet. I can't seem to find any good fish here. I miss California for that! I always enjoyed Alaskan Cod and Halibut, but for some reason it's not very popular here - you can only eat so much catfish!
