
This is a quick, no-fuss grill meal that's perfect to serve on those hot summer nights.
Ingredients:
- 1 lb. cooked shrimp
- 2 medium zucchini
- 2 medium summer squash
- 1 red bell pepper
- 2 tbsp. Ken's Lite Asian Sesame Vinaigrette Dressing
- Cut zucchini and summer squash into slices.
- Slice peppers into strips
- Remove tails from shrimp.
- Add all ingredients to a large ziplock bag; add dressing and mix well.
- Preheat grill; spray a grill wok with cooling oil spray and set on grill.
- When grill is hot, add shrimp and vegetables to grill wok.
- Stir occasionally until vegetables are cooked and shrimp is browned.
- Serve over whole grain rice, quinoa or couscous.

My husband is going to love this! I don't know why but I have never used seafood in a stir fry before. And I love the idea of making this on the grill.
